PURPOSE OF THE POSITION:
This position focuses on management
of the kitchen, food purchasing, food
production, menu design, recipe writing
and costing as well as quality management
of all Food aspects
QUALIFICATIONS & EXPERIENCES:
• Bachelor Degree in Culinary Arts
• 5 Years working experience as an
Executive Chef
• Extensive Experience in writing &
costing of menus
• Strong Buffet & A la Carte background
• Proficiency in MS Word, MICROS & MC
• HACCP is essential
KEY ACCOUNTABILITIES
• Food Production -Strong background
and experience in producing high
quality of both buffet and a la carte.
• Gross Profit - Full understanding of food
cost of sales variables, including menu
and recipe as well as costing of menus.
• Financial Controls and Continuous
Improvement -Responsible for
achieving high efficiencies in food
production and kitchen operation,
resulting in high GOPs and
departmental profitability.
• Guest Satisfaction - Promote total
guest satisfaction and ensure all guest
related issues are resolved in a manner
consistent with the company’s goals
and objectives.
SKILLS AND ATTRIBUTES
• Ability to command, organise, lead &
control complex kitchen operations
• Communication & interpersonal skills
• HOSTING personality
• Sensitivity for multi-cultural
environments
